Of course, we love to sip away on it’s own, splash some ginger ale in, or even a bit of cola but sometimes you want something a little bit different. A bit creative.
Summer is the season for cocktails and we’ve put together some sustainable serves to enjoy in the sun. Or in the rain, let’s face it.
We hate waste and we also hate faf so all the serves are really simple to make and all use ingredients you may have lying around in the kitchen from your shop earlier on in the week. Those things that just seem to go in the bin, well not this time.
Here are six sustainable serves using our rum to try this summer:
Two-Part Daiquiri
A real classic with a zero waste twist. Who doesn’t love a tasty daiq in the sun? This one is just two parts using our silky smooth golden aged rum and lime husk syrup. Here’s where we get creative.
To make your lime husk syrup, firstly you’ll just need to whip up some simple syrup. 100g to 100g of hot water - stir to dissolve. Once done, leave two used lime husks per 100ml in the syrup overnight in the fridge and then filter it out when you’re done. And there’s your zingy, sustainable syrup. Tasty and easy.
65ml Golden Aged Rum
30ml Lime Husk Syrup
Shake both ingredients over ice and double strain into a chilled coupe glass. No garnish
Funky Mojito
What says summer like a mojito. Keeping on the lime theme here, this one is just as refreshing as your usual mojito but with that extra bit of funkiness.
Using our spiced rum, lime juice, lime husk syrup (you got this), handful of mint leaves, and topped with soda or sparkling water. Dreaming of one already.
55ml Spiced Rum
10ml Lime Juice
30ml Lime Husk Syrup
Handful of mint leaves
Soda/Sparkling Water
Muddle the rum, juice and syrup with the mint leaves. Add crushed ice and top with soda water to taste. Garnish with a mint sprig.
Summer Spritz
I’m not sure this one needs any explanation for it’s inclusion in a summer serves list. You don’t see a rum spritz every day though do you? For this one we’re putting our lime husk syrup to one side and instead making a strawberry and mint syrup to go along with our spiced rum, lime juice and soda water.
Here’s how you make the strawberry and mint syrup: First, make a simple syrup. 100g of sugar to 100g of hot water, stir to dissolve. You know the drill by now. Then place a handful of the top bits of strawberry not normally eaten, as well as leftover mint, into the syrup. Now stir and leave in the fridge overnight to infuse. The next day strain out the pieces of fruit and enjoy.
50ml Spiced Rum
30ml Strawberry & Mint syrup
25ml Lime Juice
Soda Water
Shake the first 3 ingredients with ice and strain into a hi-ball or wine glass filled with ice. Top with soda water and garnish with a mint sprig and/or strawberry slice. (pimms style)
Rum Marg
Eh what, Margarita with rum? Did I stutter? The tequila favourite but using our spiced rum creates this incredibly flavoursome cocktail perfect for summer sipping.
Some of our spiced along with margarita usual suspects triple sec and lime juice but with our old friend strawberry & mint syrup thrown in for good measure.
50ml Spiced Rum
25ml Strawberry & Mint Syrup
25ml Triple Sec
20ml Lime Juice
Shake all ingredients with ice. Strain into a rocks glass with ice. Garnish with a strawberry slice or a lime wedge.
Espresso Martini
If you’re feeling like dialing down the summer a little bit - maybe it’s the evening, maybe it’s not so sunny - then how about this riff on an all-timer. We don’t need to say much about the espresso martini but this nutty twist works a treat.
We’ll be using some nutella or peanut butter infused rum. To make it, fill an empty jar of nutella or peanut butter with golden aged rum. Use whichever you have in, or prefer, and make sure the jar isn’t cleaned so there are still some nutty leftovers in there. More leftovers = more flavour.
Then shake and leave to infuse for 24 hours in a cool, dry place. Once done, filter out using a coffee filter to make sure you’re left with a super smooth infused nutty rum.
50ml Infused Rum
35ml Espresso
25ml Simple Syrup
Shake with ice. Double strain into a coupe glass. Garnish with 2 coffee beans.
White Cuban
Keeping it nutty and keeping it coffee - here’s our take on a white cuban. You’ll need some more of our nutella / peanut butter infused rum, add some coffee liqueur and top with heavy cream.
And after one sip it’s almost like you’re in cuba already.
50ml Infused Rum
20ml Coffee Liqueur
Heavy Cream to top
Add the rum and liqueur to a rocks glass and fill with ice. Top with heavy cream.
